Cockles and bacon
For a recipe similar to the Harbourmaster's cockle treat, but more traditional local morning treat try this recipe from Greg Phillpot.
Ingredients
(choose proportions based on the number of people you wish to serve)
Bacon
Lard
Cockles
Rolled oats
Lavabread
To make
- Soak cockles overnight in a bucket of water with a handfull of rolled oats( this removes the sand).
- Fry some bacon in plenty of lard, when almost done throw in the cockles
- When the shells open serve on a plate with lavabread and a mug of strong sweet tea.
