Lemon and Beer Marinated Toothfish

Ingredients

300gm mesculin salad leaves
300gm sweet potato crisps
200ml dill mayonnaise (store bought)
1kg Toothfish steaks
330ml beer (preferably ale or lager)
½ tsp sugar
zest of 1 lemon

To Marinate

Cover toothfish in beer, sugar and lemon zest mixture and leave overnight.

To Cook

  1. Heat BBQ
  2. Drain liquid from steaks
  3. Cook steaks until flesh opaque
  4. Serve with portions of salad leaves, sweet potato crisps and dill mayonnaise.

Toothfish was on the menu at the 2007 Auckland Seafood Festival an annual event organised by Sanford Limited to highlight the huge array of delicious seafood available to the public.  Another highlight of the 2007 festival was shown in Sanford’s continued commitment to sustainability as the festival was New Zealand’s first carbon neutral festival.
