Roasted Alaska Salmon with Honey & Balsamic Glaze

Ingredients

7 oz Alaska salmon fillet (skin off)
2 oz balsamic vinegar
2 oz honey
salt and pepper to taste
olive oil

To make

  1. Season salmon fillet with salt and pepper
  2. In a pan over high heat reduce the balsamic vinegar by half then add honey.  Reduce again by about 1/3 volume then remove from heat.
  3. In another hot pan, sear the seasoned fish for one minute on both sides.
  4. Remove pan from heat and pour the glaze over the seared salmon.  Finish cooking in a 400 degree over for 4 or 5 minutes.
  5. Serve salmon over pasta or mashed potato.  Garnish with lemon and fresh chive.
