Roasted Alaska Salmon with Honey & Balsamic Glaze

Ingredients
7 oz Alaska salmon fillet (skin off)
2 oz balsamic vinegar
2 oz honey
salt and pepper to taste
olive oil
To make
- Season salmon fillet with salt and pepper
- In a pan over high heat reduce the balsamic vinegar by half then add honey. Reduce again by about 1/3 volume then remove from heat.
- In another hot pan, sear the seasoned fish for one minute on both sides.
- Remove pan from heat and pour the glaze over the seared salmon. Finish cooking in a 400 degree over for 4 or 5 minutes.
- Serve salmon over pasta or mashed potato. Garnish with lemon and fresh chive.
