Sablefish, salmon and avocado kebabs

Essential equipment

4 bamboo skewers

Ingredients

200 g Alaskan salmon fillets
200 g Alaskan sablefish fillets
1 avocado
salt
Sichuan pepper
olive oil
Thai chilli sauce
 

To make

  1. For each kebab, cut four equal-sized pieces from the avocado and both types of fish, then push them onto the bamboo skewers, alternating the pieces. Season the kebabs with Sichuan pepper and salt.
  2. Fry them in a pan in olive oil and serve with Thai chilli sauce.
