Salmon Pattie

Serves 4

Ingredients

415g can John West Pink Salmon, drained and flaked
500g potatoes, cooked & masked
1 egg, beaten
1 tablespoon chopped fresh dill
1 teaspoon finely grated lemon rind
1 dill cucumber, finely chopped
¼ cup grated cheese

Method

  1. Mix John West Pink Salmon with remaining ingredients, season with salt and pepper.
  2. Mix well, shape into 8 fish cakes and lightly coat in plain flour.
  3. Pan fry in hot oil for 3 minutes on each side or until golden brown. Drain on paper towel and serve.
