Smoked Alaska Salmon and Onion Tart

serves 4 as a starter

Ingredients

1 pre-baked pie shell
2 medium yellow onions, sliced
1 stick unsalted butter
2 tablespoons all-purpose flour
½ cup heavy cream
2 eggs
1 cup grated cheddar cheese
10 oz smoked Alaska salmon flakes


To make

  1. Melt butter in a pan, add onions and sweat without browning (medium heat until soft and translucent)
  2. Transfer to medium sized bowl and stir in flour cream and eggs.
  3. Gently fold in cheese and salmon.  Season to taste with salt & pepper.
  4. Pour in pre-baked pie shell and bake at 350 degrees until golden brown and set (45-60 minutes).
