Rock lobster
The terms “rock” and “spiny” lobster are sometimes
used interchangeably. Spiny lobster, comprising several species, does
not have the characteristic large front claws of the American lobster;
it has a spiny, hard shell for protection (hence its name).
Lobster has a full-flavoured sweet and firm meat. It is delicious whole-cooked and used in a variety of recipes. Try some of our sustainable spiny lobster recipes below!
