Sole
Sole is lean with white meat and a very mild flavour. There are various different species of sole, and it is available both fresh and frozen depending on the region.
Its fine eating quality has made the name “sole” so highly desirable that many species of fish not technically soles (members of the Soleidae family) are given the name to improve their marketing appeal.
