Mackerel from Waitrose

Serves 2

Ingredients

4 Waitrose sustainably sourced MSC line caught Cornish mackerel fillets
1 lemon - juiced
unsalted butter for frying
 

To make

Heat a shallow pan (ideally a griddle pan) and add some unsalted butter. If you haven’t got unsalted butter (which can stand a much higher cooking temperature than salted), mix half and half butter and olive oil. When the pan is hot (the butter will start to bubble slightly) fry the fillets in the pan for about 45 seconds - 1min each side then lift them out onto warmed plates. Add the juice to the pan and stir it around in the buttery juices. Pour over the fillets. Serve with a fresh green salad and some boiled new potatoes.
