Sablefish, salmon and avocado kebabs

4 bamboo skewers
200 g Alaskan salmon fillets
200 g Alaskan sablefish fillets
Thai chilli sauce
- For each kebab, cut four equal-sized pieces from the avocado and both types of fish, then push them onto the bamboo skewers, alternating the pieces. Season the kebabs with Sichuan pepper and salt.
- Fry them in a pan in olive oil and serve with Thai chilli sauce.
