Sustainable salmon pasta

Thanks to John West for providing this sustainable salmon pasta recipe.

Serves 2

Ingredients

210g can MSC-labelled sustainable salmon, drained and flaked
375g ribbon pasta
½ cup sundried tomatoes
2 teaspoons capers
½ cup fresh basil leaves
2 teaspoons balsamic vinegar

Method

  1. Cook pasta until al dente.
  2. Drain and return to hot saucepan, add salmon and remaining ingredients, tossing well.
  3. Season with salt and cracked black pepper.
