Salmon Patties

serves 4
Ingredients
1 (7 ½ oz.) can pink Alaska salmon, drained
10 saltine crackers – crushed (about ½ cup)
¼ C. yellow cornmeal
2 large eggs, lightly beaten
½ tsp. dried dill weed
¼ tsp. onion powder
¼ tsp. pepper
1-3 T. milk
creamy dill sauce
Creamy Dill Sauce
Mix together
1/3 cup mayonnaise
2 T. Dijon mustard
2 T. dill cubes or chopped pickles
To make
- Preheat oven to 400 degrees. Stir together salmon, cracker crumbs, cornmeal, eggs, dill weed, onion powder and pepper. Add milk, one tablespoon at a time as needed.
- Shape into four patties and place on baking sheet coated with vegetable cooking spray. Bake 20 minutes – do not turn.
- Serve with creamy dill sauce. (For fried patties: Brown Alaska salmon patties in one tablespoon of oil in a nonstick skillet over medium high heat.)
