Salmon Patties

serves 4

Ingredients

1 (7 ½ oz.) can pink Alaska salmon, drained
10 saltine crackers – crushed (about ½ cup)
¼ C. yellow cornmeal
2 large eggs, lightly beaten
½ tsp. dried dill weed
¼ tsp. onion powder
¼ tsp. pepper
1-3 T.  milk
creamy dill sauce

Creamy Dill Sauce

Mix together
1/3 cup mayonnaise
2 T. Dijon mustard
2 T. dill cubes or chopped pickles

To make

  1. Preheat oven to 400 degrees.  Stir together salmon, cracker crumbs, cornmeal, eggs, dill weed, onion powder and pepper.  Add milk, one tablespoon at a time as needed. 
  2. Shape into four patties and place on baking sheet coated with vegetable cooking spray.  Bake 20 minutes – do not turn. 
  3. Serve with creamy dill sauce.  (For fried patties:  Brown Alaska salmon patties in one tablespoon of oil in a nonstick skillet over medium high heat.)
