Salmon tartare and black sesame tartlets

Serves 4

Ingredients

4 short-crust pastry tartlets (from delicatessen)
200 g Alaskan salmon fillets
100 g crème fraîche
chives
10 g black sesame seeds
lemon olive oil
salt and pepper

 

To make

  1. Refrigerate the salmon fillets before dicing as finely as possible. Season the diced fish with lemon olive oil, salt and pepper. Add the sesame seeds.
  2. Season the crème fraîche with salt and pepper, then add the finely chopped chives. Fill the tartlets with the crème fraîche and top with the salmon tartare.
