Toothfish steaks with pesto and coriander

“The Government of South Georgia Director of Fisheries sent me a recipe for "Barbeque Thai style Toothfish". But living on South Georgia, I did not have the right ingredients in my kitchen cupboards so invented this recipe based on the recipe I had been sent and what I did have in the cupboards!

Ingredients

4 Toothfish steaks
2 tbs pesto (any sort)
1 tsp minced coriander (or 1 tbs chopped fresh coriander)
1 clove crushed garlic
A pinch of dried chilli flakes
1/2 tsp turmeric powder
A squeeze of lemon juice
ground fresh black pepper
a little olive oil.

To make

Clean and pat dry the toothfish steaks.

Mix all the other ingredients except the olive oil and spread on both sides of the steaks. Leave covered in the fridge for 20 minutes.

Heat a griddle or frying pan with a splash of olive oil, and cook the fish on a medium to high heat for about three minutes each side (adjust according to the thickness of the steaks) until just cooked through. Serve with wild rice and a salad.

I did this for a dinner party. Everybody wanted to know how it was done. Really easy to do and very, very nice.
