MSC certified fisheries take centre stage as Fish Tales reaches Gourmand Best Cook Book world finals

Pioneering seafood entrepreneur Bart van Olphen and inspirational chef Tom Kime [1] have reached the world finals of the Gourmand Best Cook Book contest with Fish Tales, their collection of seafood recipes and insights into sustainable fisheries around the world. Fish Tales has already won the Best Photography category in The Netherlands, and will be judged at the Paris Cook Book Fair on 3 March.

Fish Tales is published by Kyle Cathie in association with the Marine Stewardship Council (MSC), the world’s leading certification and ecolabelling programme for sustainable seafood. All the fisheries featured have met the MSC standard for sustainable fishing. Through their responsible management of marine resources, contributing to the health of our oceans and helping ensure a future full of fish.
Bart and Tom travelled the world to learn about sustainable methods of fishing and get to know the fishers and communities whose livelihoods depend upon safeguarding fish stocks and marine environments. Fish Tales tells the story of many of the MSC certified fisheries they encountered, from the Norwegian haddock and cod fisheries to the hand-cut clam fisheries of Vietnam and the salmon fisheries managed by the Yup’ik communities in Alaska. With stunning location photography, each chapter offers captivating accounts of the fishery, accompanied by delicious recipes inspired by a variety of places and cultures, including Stir-fried Clams with Thai Basil and Chilli Jam, Barbecued Mackerel with Horseradish and English Mustard, and Bourride of Salt Cod with Saffron Aïoli.
