Mar 01, 2011
Pioneering seafood entrepreneur Bart van Olphen and inspirational chef Tom Kime have reached the world finals of the Gourmand Best Cook Book contest with Fish Tales, their collection of seafood recipes and insights into sustainable fisheries around the world. Fish Tales has already won the Best Photography category in The Netherlands, and will be judged at the Paris Cook Book Fair on 3 March.
About Fish Tales
Fish Tales is published by Kyle Cathie in association with the Marine Stewardship Council (MSC), the world’s leading certification and ecolabelling programme for sustainable seafood. All the fisheries featured have met the MSC standard for sustainable fishing. Through their responsible management of marine resources, contributing to the health of our oceans and helping ensure a future full of fish.
Bart and Tom travelled the world to learn about sustainable methods of fishing and get to know the fishers and communities whose livelihoods depend upon safeguarding fish stocks and marine environments. Fish Tales tells the story of many of the MSC certified fisheries they encountered, from the Norwegian haddock and cod fisheries to the hand-cut clam fisheries of Vietnam and the salmon fisheries managed by the Yup’ik communities in Alaska. With stunning location photography, each chapter offers captivating accounts of the fishery, accompanied by delicious recipes inspired by a variety of places and cultures, including Stir-fried Clams with Thai Basil and Chilli Jam, Barbecued Mackerel with Horseradish and English Mustard, and Bourride of Salt Cod with Saffron Aïoli.
What Bart van Olphen says
Bart van Olphen said: “It’s great news that we have been nominated for the ‘Gourmand Best Cookbook of the World Award’. With this ‘behind the scenes’ book I wanted to show the world of MSC certified fisheries. It’s impressive to see how those communities live and fish, always respecting nature. Tom’s recipes show how versatile, simple and delicious fish can be, so we are hoping everyone will be inspired to enjoy delicious and responsible fish dishes at home. By choosing certified sustainable seafood, we can all take care of the sea, the fish and the fishermen.”
What the MSC says
Simon Edwards, MSC Global Marketing and Communications Director, said: “The MSC was delighted to support the publication of Fish Tales. Bart and Tom really get behind the blue MSC ecolabel which we can see on products in supermarkets and fishmongers the world over, to bring the story of these fishers to life. We wish them good luck in the Paris final, and hope that their book continues to inspire consumers, chefs and retailers everywhere to buy and enjoy sustainable seafood, and support these and other great fisheries from all over the world.”
