Tuna cakes

Serves 4
Ingredients
4 medium size baking potatoes (Yukon are best)
1 can tuna (in water)
1 lemon
1/2 cup chopped green onion
1/2 tablespoon good quality imported mustard
To make
Cook 4 baking potatoes (Yukon are best)
Prepare as if you are making mashed potatoes
Once the mashed potatoes have cooled so that you can handle them, add one can of drained tuna fish along with 1/2 tablespoon of good quality imported mustard plus 1/2 cup of chopped green onion
Make 4 large patties and then dip each patty in fine breadcrumbs
Saute in olive oil (or butter) until well-browned on both sides appropriately 15 minutes in total
Serve with fresh lemon slices
