200g hake (or similar MSC certified flaky white fish)

50g artichokes
100g green asparagus
½ glass squeezed orange juice
½ glass squeezed lemon juice
3 pea pods
6 laurel (bay) leaves
6 lemon slices

Method
- Marinate the hake: Place the hake pieces in a bowl and pour over the orange and lemon juice. Let the fish marinate for 1 hour to absorb the citrus flavors.

- Sauté the vegetables: Heat a little olive oil in a pan and sauté the artichokes, peas, and asparagus until lightly tender. Set aside.

- Steam the hake: Place some laurel leaves and slices of lemon on the bottom of a steamer. Lay the marinated hake on top. Bring a pan of water to boiling point, then place the steamer with the hake on top and then put on a lid. Steam the fish for
8-10 minutes.

- Serve and season: Serve the hake with the vegetables and season with salt and pepper to taste.
