Broiled Wild Salmon with Pineapple Salsa

Ingredients

Ingredients

  • 4 fillets (about 680g) MSC certified salmon
  • Olive Oil
  • Pinch of garlic powder
  • Salt and pepper to taste
  • Lime for garnish

Pineapple Salsa

  • 1 cup of chopped pineapple
  • 1 jalapeno with seeds removed & chopped
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup of chopped cilantro
  • 1 lime, juiced

Method

Method

Salmon:

  1. Preheat oven to high broil.
  2. Take your MSC Certified salmon fillets and place them on a cooking sheet.
  3. Pour olive oil over them
  4. Season with salt & pepper, garlic powder, and any other seasonings you like. I used some chipotle powder with these.
  5. Broil on high for about 7-8 mins.

Salsa:

  1. Mix all ingredients together in a bowl. You can make this in the time it takes to broil the salmon.
  2. Top grilled salmon with salsa and serve with your favorite side and greens!
