Method
Method
- Grill the pineapple until lightly charred, then dice and toss with red onion, jalapeño, coriander, lime juice and salt.
- Combine the cabbage, carrot and coriander with lime juice and a pinch of salt. Mix the mayonnaise, sriracha and lime juice together for the sauce.
- For the beer-battered version, whisk the flour, baking powder, paprika, garlic powder and salt together. Gradually whisk in the cold beer until you have a smooth batter. Coat the fish and fry in hot oil until golden, crisp and cooked through.
- (For the Birds Eye version, skip the batter and frying completely. Cook the MSC-certified Birds Eye Air Baked Hoki Tenders according to the packet instructions, then use them straight in the tacos.)
- Warm the tortillas, then layer with crunchy slaw, crispy hoki, grilled pineapple salsa and plenty of sriracha lime mayo. Finish with coriander and fresh lime.
