- 3-4 fillets (approx. 400g total) MSC certified haddock, fresh or frozen
- 1/4 cup unsalted almonds
- 2 tbsp extra virgin olive oil
- 3 tsp fresh thyme
- 2 medium cloves garlic
- 1/2 tsp salt
- 1/4 tsp coarse black pepper
- 1 tbsp fresh lemon juice
Method
Method
- If using frozen fish, thaw, drain and pat fillets dry with paper towel.
- Preheat oven to 400°F degrees.
- Arrange fillets in a rimmed baking dish brushed with olive oil, or on a parchment lined baking sheet
- In a small food processor, pulse almonds, oil, thyme, garlic, salt, pepper and lemon juice until medium-fine texture.
- Top each fillet with nut-herb mixture, pressing gently and spreading to coat entire fillet.
- Bake for 10-12 minutes or until cooked through, depending on fillet thickness.
