Nut and herb crusted baked haddock

  • 3-4 fillets (approx. 400g total) MSC certified haddock, fresh or frozen
  • 1/4 cup unsalted almonds
  • 2 tbsp extra virgin olive oil
  • 3 tsp fresh thyme
  • 2 medium cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp coarse black pepper
  • 1 tbsp fresh lemon juice

Method

Method

  1. If using frozen fish, thaw, drain and pat fillets dry with paper towel.
  2. Preheat oven to 400°F degrees.
  3. Arrange fillets in a rimmed baking dish brushed with olive oil, or on a parchment lined baking sheet
  4. In a small food processor, pulse almonds, oil, thyme, garlic, salt, pepper and lemon juice until medium-fine texture.
  5. Top each fillet with nut-herb mixture, pressing gently and spreading to coat entire fillet.
  6. Bake for 10-12 minutes or until cooked through, depending on fillet thickness.
