Wild BBQ lobster with lime, chilli and ginger

  • 1 x 600-700g MSC certified wild-caught lobster, cut in half (look for the MSC blue fish tick)
  • 250g soft butter 
  • 1 tbs, chopped coriander
  • 1 tsp minced ginger 
  • 1 tsp lime rind 
  • ½ tsp, minced chilli 
  • Salt 
  • Pepper

  1. Preheat your oven to 180 celsius or BBQ to medium. 
  2. In a bowl mix your soft butter, coriander, ginger, lime rind, chilli, salt and pepper in a bowl until combined evenly. 
  3. Using a spoon, butter the flat flesh side of your prepared lobster generously. 
  4. Place on your prepared BBQ or in your oven shell side down and cook on medium to low heat for 25 minutes or until the flesh has changed colour and is white. To speed the cooking process up, close the lid of your BBQ or cover your lobster with a metal bowl. 
  5. Let your lobster rest for 5 minutes then serve hot.
