- 1 tin Sardines, canned
- 1 medium White onion
- 2-4 Garlic cloves
- 2 TBSP Lemon juice
- 150-200g Olive oil
- Salt to taste
- Pepper to taste
- 12-18 pieces Capers, jarred
- 3-4 sprigs Oregano, marjoram, or thyme

Method
For the charred onion vinaigrette:
- Peel and cut your onion into large discs, leaving the tops intact
- Place the flats of the discs on a lightly oiled pan and cook without moving on medium high heat until the one side of the onion starts to char hard
- When char is sufficient, add a few splashes of water to the pan and cover with a lid to let the onion steam cook
- Once mostly tender, transfer charred onions to blender and add garlic, olive oil, desired herbs, lemon juice and salt and pepper to taste.
- Blend until fully smooth and emulsified. *The vinaigrette breaking is completely normal, and rarely stays emulsified for long*
- Cool vinaigrette if warm, then season to taste with salt pepper and lemon juice and boom! It’s done
To plate:
- Remove sardines from tin and place on desired plate
- Pouring over the fish, dress them heavily with onion vinaigrette
- Top with capers, desired herbs and lemon zest if desired
- Serve with a side of your favorite toasted bread or cracker/ crispy vessel!
