Garlic Prawns Recipe

Ingredients

  • 1kg MSC certified Green/Raw banana prawns 
  • 2/3 cup extra virgin olive oil 
  • 40g butter 
  • 6 cloves garlic, peeled, sliced 
  • 1 long red chilli, sliced 
  • 2 tablespoons flat parsley, chopped 
  • 1 tablespoon dill, roughly chopped 
  • ½ lemon to serve 
  • Sea salt and pepper to taste 
  • Toasted sourdough bread to serve

Method

Impress your guests with this simple favourite Christmas prawn dish.

  1. Peel the prawns, leaving the tail intact, and reserve the heads and shells. Carefully cut the prawns down the back to butterfly them open to expose the intestinal tract, then remove them. Place the clean prawns in a bowl and set aside in the refrigerator. 
  2. Heat the oil and butter in a large frying pan, then add in the reserved prawn heads and shells. Cook over medium heat for 15 minutes, or until the shells are fragrant, the oil has turned an amber colour and taken on the flavour of the shells. Strain the prawn shells from the oil through a sieve placed over a bowl.
  3. Wipe the frying pan clean with a paper towel and place the pan back onto medium heat. Pour the prawn shell oil into the pan, then add the garlic and chilli. Cook, stirring occasionally, for 2 minutes or until fragrant. Add the prawns in a single layer into the pan and season with a pinch of salt and pepper. Cook the prawns for 45 seconds on one side, then turn them over and cook for a further 45 seconds or until just cooked. Remove the pan from the heat and add in the parsley, dill and a squeeze of lemon.
  4. Place the prawns onto a serving plate and drizzle with any excess oils in the pan. 

Serving suggestion for garlic prawns

Serve warm with lemon wedges and toasted sourdough bread on the side.
