Smoked salmon brunch salad

Ingredients

  • 12 sheets of MSC certified smoked salmon
  • 1/2 a red onion, sliced thin
  • 1/4 cup apple cider vinegar
  • 2 sesame seed bagels, sliced into medallions
  • 4 large eggs
  • 1 clove garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 142 g Mixed greens
  • 1/4 cup capers
  • Salt and pepper to taste

When shopping, look for the MSC blue fish label on your seafood to know it's sustainable.

Method

  1. Preheat the oven to 400°F.
  2. Place the onion in a bowl and cover with the vinegar. Set aside to pickle.
  3. Place bagel slices on a baking sheet and drizzle with olive oil and sprinkle with salt. Transfer to the oven and toast for 10 minutes.
  4. Bring a pot of water to boil and add the eggs. Reduce the heat until the water reaches a simmer. Cook for 7 minutes before transferring to an ice bath. Let sit for 10 minutes before peeling and slicing.
  5. In a bowl, whisk to combine the garlic, Dijon mustard, honey, olive oil, the vinegar from the onions, and salt. Pour the mixture over the greens and toss to coat.
  6. Top the greens with smoked salmon, bagel chips, eggs, onions, and capers. Serve immediately.
