Canned Sardines on Toast with Capers and Red Onion

Ingredients

  • 1 x 140g can sardines  
  • Sardine mayonnaise (see ingredients and method below) 
  • ½ red onion, finely sliced 
  • 1 tablespoon capers, rinsed and drained 
  • 1 tablespoon finely chopped curly parsley 
  • 1 dill pickle, finely sliced 
  • 2 slices sourdough bread 
  • Salt and white pepper    







Method

  1. Drain the oil from the can of sardines and use it to make the mayonnaise.  
  2. Put the sardines in a bowl with the onion, capers, parsley and pickle.
  3. Gently break up the fish but leave nice chunks.
  4. Season.
  5. Toast the bread, then heap the sardine mixture on top. 

For the Sardine Mayonnaise

  1. Whisk 1 egg yolk with 1 teaspoon Dijon mustard and 1 tablespoon tomato paste.
  2. Drain the oil from a 140g can of sardines and slowly drizzle it into the yolk mixture while whisking to build up a nice thick mayonnaise.
  3. Season and add a splash of Tabasco or other chilli sauce to taste. 
Serve the mayo on the side.
