Garlic Chilli Prawn Spaghetti

Ingredients

  • 200g spaghetti 
  • 3 tbsp extra virgin olive oil 
  • 3–4 garlic cloves, finely sliced 
  • 1 tsp dried chilli flakes 
  • 150g MSC-certified red shrimp  
  • 10–12 cherry tomatoes, halved 
  • Zest & juice of ½ lemon 
  • Handful flat-leaf parsley, chopped 
  • Salt & pepper 

Method

  1. Cook spaghetti in salted water as per packet instructions. Reserve 100ml pasta water before draining. 

  1. While pasta cooks, heat oil in a large pan. Gently fry garlic until golden. Add chilli flakes and cherry tomatoes. Cook until softened (3–4 min). 

  1. Add prawns and a splash of pasta water. Simmer 1 min. 

  1. Toss in drained pasta, lemon juice, zest, and parsley. Season well. 

  1. Serve in bowls, drizzle with more olive oil and scatter chilli flakes or parsley to finish.
