                    Ingredients
- 200g spaghetti
- 3 tbsp extra virgin olive oil
- 3–4 garlic cloves, finely sliced
- 1 tsp dried chilli flakes
- 150g MSC-certified red shrimp
- 10–12 cherry tomatoes, halved
- Zest & juice of ½ lemon
- Handful flat-leaf parsley, chopped
- Salt & pepper
Method
- Cook spaghetti in salted water as per packet instructions. Reserve 100ml pasta water before draining. 
- While pasta cooks, heat oil in a large pan. Gently fry garlic until golden. Add chilli flakes and cherry tomatoes. Cook until softened (3–4 min). 
- Add prawns and a splash of pasta water. Simmer 1 min. 
- Toss in drained pasta, lemon juice, zest, and parsley. Season well. 
- Serve in bowls, drizzle with more olive oil and scatter chilli flakes or parsley to finish.
