Fish Finger Pasta with a Creamy Tomato Sauce

Ingredients

12 MSC certified fish fingers
250 g kids shaped pasta 
1 onion, finely chopped 
1 clove garlic, finely chopped/grated
2 cup tomato passata 
1 cup (250 ml) cream 
½ cup (125 ml) cheddar cheese, finely grated 
Baby basil leaves for garnish (optional)

Method

  1. Preheat the oven or air fryer to 200 ºC. Lay frozen fish fingers onto a baking tray or into the air fryer basket. Cook for approximately 15 minutes until golden and crunchy. 
  2. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  3. In a large pan, sauté the chopped onion for 3 minutes. Add the garlic and cook for an additional minute.
  4. Pour in the tomato passata and cream. Reduce the sauce over medium heat for 10-15 minutes, stirring occasionally.
  5. Just before serving add the cooked pasta to the sauce and toss to combine.
  6. Cut the cooked fish fingers into thirds; portion the pasta onto plates and top with fish fingers and a sprinkling of grated cheddar cheese and baby basil leaves (if using). Serve immediately.
