Fish tikka masala

Ingredients

2 tbsp vegetable oil
400g MSC certified frozen cod 
1 red onion
1 tbsp ginger and garlic paste
1/2 tin of chopped tomatoes 
Large bunch of fresh coriander 
2-5 green chillies 
100ml double cream

1 tsp freshly cracked pepper 

Whole spices:
1 tsp ajwain/carom seeds 
1 tsp black mustard seeds 
1 bayleaf 

Ground spices:
1 tsp cumin
1 tsp coriander
1 tsp red chilli
1 tsp salt
1/2 tsp red chilli flakes 
1/2 tsp turmeric 

Method

  1. Start by frying the whole spices in veg oil for a minute. Add the onions and stir for 3 mins before adding ginger garlic paste. Stir for 2 minutes and then add all the ground spices.
  2. Stir for 2 minutes further, then add the chopped tomatoes, along with 1/4 cup of water, coriander and green chillies. 

  3. Mix it all together and turn the heat down to simmer and let it cook for 5 minutes. 

  4. Place the MSC certified frozen cod fillets along with a splash of water and cover the whole thing with spinach leaves for some extra green.  
  5. Cover and simmer for 12-15 minutes or until the cod has cooked through, it should break apart easily. 
  6. Pour over some cream and stir it through. Finish with coriander, green chillies and pepper
