4 MSC certified frozen hake fillets
2 tbsp. garlic
Half of a white onion
Handful chopped spinach
1 can whole tomatoes, peeled
1 tbsp. onion powder
1 tbsp. sweet basil
1 tbsp. fish seasoning
1 tbsp. cajun seasoning
1 tbsp. brown sugar
Salt and pepper to taste
3 tbsp. olive oil
Half of a red or bell pepper
1 stock cube in a cup of hot water
Heat up your pan, add the onions and red pepper. Fry until translucent.
Add the spinach and wilt. Add seasonings and mix together well.
Add the tomatoes, sugar, and the stock cube in water and allow to simmer for 10 minutes.
Preheat the oven to 180 degrees Celsius and add hake fillets to the tomato mixture. Season with salt and pepper and bake for 25 minutes.
Serve with rice or couscous.
