Kenny’s freshly steamed Shetland mussels with garlic and spring onion

  • 900g live MSC certified Shetland mussels
  • 8 spring onions, roughly chopped
  • 2 garlic cloves, thinly sliced
  • 150ml single cream
  • Crusty bread, to serve


  1. Start by checking the mussels are clean and unbroken. Tap each open mussel on a hard surface. If the mussel doesn’t close by itself, then discard.
  2. Once washed, set aside. Then, in a heavy bottomed pan heat the olive oil and sauté garlic and spring onions until soft.
  3. Add the mussels. Cover and cook for 3-4 mins or until the mussels start to open. Add cream and stir, season to your liking.
  4. Take out and throw away any unopened mussels.
  5. Divide into bowls and serve with crusty bread.
