Spicy tuna melt toasties

Ingredients

Tuna Mix:

3 x 185g can MSC certified tuna in olive oil (drained) - look for the MSC label
6 tbsp mayo
3 tsp Sriracha
3 tsp Dijon mustard
3 tbsp red onion (finely chopped)
3 tbsp chives
3 tbsp flat-leaf parsley
6 tbsp chopped pepperoncini or pickled jalapeños
Salt + cracked black pepper to taste
 

The Melt:

12 slices sourdough or brioche, lightly toasted
3 large tomatoes, sliced & salted
3 cups grated aged cheddar + mozzarella
Butter for toasting

Method

  1. Mix all tuna ingredients until creamy with texture.
  2. Butter the outside of each bread slice.
  3. Inside: tuna mix > tomato slices > grated cheese.
  4. Toast in a skillet on medium heat until golden and melty on both sides.
  5. Slice in half, serve hot, let the cheese pull do its thing.
