Tuna Niçoise Grazing Platter

  • 2 cans of MSC certified tuna
  • 5 baby cucumbers thickly chopped
  • 5 baby carrots – rinsed and set aside
  • Small packet of radish – rinsed and set aside
  • 5 eggs – cooked to desired preference
  • Small punnet baby tomatoes – rinsed and set aside
  • Small bunch of asparagus – blanch for 3 minutes
  • 5 baby sweet potatoes - boil until soft and set aside
  • 1 cup kalamata olives
  • 1 packet mixed lettuce leaves
Salad Dressing
  • 1 Tablespoon whole grain mustard
  • ¼ cup red wine vinegar
  • 2 tablespoons honey
  • 1 cup olive oil
  • Juice and rind of 1 lemon
  • 1 small bunch chives – finely chopped
  • Salt and pepper to taste

  1. Drain the tuna and set aside
  2. Combine all the salad dressing ingredients and mix until well combined
  3. Generously pour over the salad dressing and serve
  4. Adjust seasoning according to taste
