Tuna melt spring rolls

  • 250g MSC labelled tinned tuna in oil, drained
  • ½ small red onion, diced finely
  • 4 tbsp mayonnaise
  • 1 large tomato, diced
  • 6 slices Kraft singles, diced (or sub with your favourite cheese)
  • 1 cup mozzarella, shredded
  • 10 medium spring roll wrappers* (sub with filo pastry)
  • Salt and pepper

Method

Method

  1. Pre-heat your oven to 180°C.
  2. Mix MSC tuna, red onion, mayonnaise, tomato, Kraft singles, mozzarella, salt and pepper together.
  3. Lay out spring roll wrappers on a clean bench and evenly divide the mixture across the wrappers.
  4. Roll the spring rolls (follow pack instructions or check out this helpful video).
  5. Place spring rolls on a lined baking tray and cook for 30 minutes in the oven, turning over half way through to brown on both sides.
  6. Remove from the oven and serve as is or with sweet chilli mayo! Don’t worry if some of the filling spills out the side (that’s the tastiest bit in my mind).

* Note: You can be flexible with the spring roll wrappers you use. If you want big spring rolls find larger wrappers and make less, if you want mini spring rolls buy smaller wrappers and make more!
