Steamed Hake and Vegetables

Ingredients

  • 200g hake (or similar MSC certified flaky white fish)

You’ll  also need…
  • 50g artichokes
  • 100g green asparagus
  • ½ glass squeezed orange juice
  • ½ glass squeezed lemon juice
  • 3 pea pods
  • 6 laurel (bay) leaves
  • 6 lemon slices
  • Olive oil
  • Salt & pepper

Method

  1. Marinate the hake pieces in orange and lemon juice for an hour.

  2. Sauté the artichokes, the peas, the green beans and the asparagus in a pan with some olive oil.

  3. Place some laurel leaves and slices of lemon on the bottom of a steamer and then place the previously marinated hake pieces on top. Bring a pan of water to boiling point, place the steamer with the hake on top and then put on a lid. Steam the fish for 8-10 minutes.

  4. Serve the hake with the vegetables and season with salt and pepper to taste

Chef Naledi's Tip: Hake becomes tough when steamed for too long. Always follow cooking times to avoid. Serve with quick-to-cooked seasonal vegetables.
