Wasabi Mayonnaise

  • 2 tbsp real mayonnaise
  • 1 tbsp wasabi paste
  • 1 tsp rice vinegar

Bowls

  • 1 cup sushi rice cooked and cooled
  • 2 sheets of nori (toasted seaweed) dampened
  • 4 oz MSC certified smoked salmon
  • 1 cup cucumber cut into matchsticks
  • 1 avocado sliced
  • 2 scallions sliced
  • 1 tsp black sesame seeds
  • soy sauce

Wasabi Mayonnaise

  1. In a small bowl, whisk together the mayonnaise, wasabi paste, and rice vinegar. Refrigerate until ready to use.

Bowls

  1. Divide rice between two bowls
  2. With your fingers, dampen nori with water, and cut into strips. Divide the nori between the two bowls.
  3. Roll smoked salmon slices into cigar shapes and divide between the bowls
  4. Top the bowls with avocado, cucumber slices and scallions.
  5. Sprinkle each bowl with sesame seeds, and drizzle with wasabi mayonnaise
  6. Serve with soy sauce on the side.

Note: You can substitute any short-grained rice, such as arborio, for the sushi rice. Reduce the amount of wasabi paste if you want a milder sauce. If you can't find wasabi paste, sriracha is a delicious substitute.
