Wasabi Mayonnaise
- 2 tbsp real mayonnaise
- 1 tbsp wasabi paste
- 1 tsp rice vinegar
Bowls
- 1 cup sushi rice cooked and cooled
- 2 sheets of nori (toasted seaweed) dampened
- 4 oz MSC certified smoked salmon
- 1 cup cucumber cut into matchsticks
- 1 avocado sliced
- 2 scallions sliced
- 1 tsp black sesame seeds
- soy sauce

Wasabi Mayonnaise
- In a small bowl, whisk together the mayonnaise, wasabi paste, and rice vinegar. Refrigerate until ready to use.
Bowls
- Divide rice between two bowls
- With your fingers, dampen nori with water, and cut into strips. Divide the nori between the two bowls.
- Roll smoked salmon slices into cigar shapes and divide between the bowls
- Top the bowls with avocado, cucumber slices and scallions.
- Sprinkle each bowl with sesame seeds, and drizzle with wasabi mayonnaise
- Serve with soy sauce on the side.
Note: You can substitute any short-grained rice, such as arborio, for the sushi rice. Reduce the amount of wasabi paste if you want a milder sauce. If you can't find wasabi paste, sriracha is a delicious substitute.
