Atlantic mackerel Scomber scombrus © Scandinavian Fishing Year Book
Mackerel is the name for several species of pelagic, or midwater-dwelling, fish. It is an oily fish, rich in omega-3 fatty acids. Before refrigeration, mackerel was always cured or smoked due to its tendency to spoil very quickly. These traditional preparations remain common.
