Japanese scallop Patinopecten yessoensis © Scandinavian Fishing Year Book

The scallop shell is a common decorative motif because of its pleasing geometric shape. Simply caught and removed from their shells, scallops are individually frozen within 30 minutes of leaving the water. This keeps them at their freshest, preserving their texture and naturally sweet taste. Try some of our sustainable scallop recipes below!
